Quick Blackberry Chutney
With its fruity, spicy berry flavour, this chutney is great with prok on the summer barbecue or with fresh ham.
Prep time: 10 mins Cook time: 40 mins Makes: 3 x 250 ml jars
1 tablespoon oil
1 medium onion, peeled and finely chopped
3 gloves garlic, peeled and finely chopped
500grams blackberries (fresh or frozen)
grated rind of 2 oranges
1/4 cup brown sugar
1/4 cup cider or wine vinegar
Heat the oil in the a saucepan and cook the onion and garlic over a moderate heat for 5 minutes until softened but not coloured. Add the blackberries, orange rind, brown sugar and vinegar - simmer gently for about 30 minutes until the mixture is quite thick. (If you have used frozen fruit, it may take 5 minutes longer).
Bottle in hot, sterilised jars and seal when cold. Keep refrigerated.
